Harvesting Tamarind Pulp

Shell your tamarinds by squeezing the shell and collect all the pulp. Put about 300g of Tamarind pulp and a few mint leaves (optional) in a salad bowl or a large pitcher.

Heat 1.5L of water in a saucepan. Do not go to a boil, the water must be lukewarm!
Add the water to the bowl containing the tamarind and mint leaves.

Soak the Tamarind Pulp

Cover the bowl and let your Tamarind juice cool for 45 minutes to 1 hour.

After 45 minutes to an hour of waiting, the Tamarin has normally already infused the water well. The water has cooled down nicely and you should be able to get your hands in there. Then knead the tamarind seeds by hand in order to recover all the pulp.

Filter and Sweeten your Tamarin Juice

Pass your Tamarind juice through a sieve or strainer to filter out all the pieces of Tamarind. Then add sugar to your liking. I personally put 100g of sugar in my recipe.
You can also add a little lemon juice.
