Directions
Dambou is a delicious spinach couscous straight from Niger but which can also be found in Benin. Dambou is a festive dish and is often prepared for occasions such as weddings or baptisms.
Dambou in all its forms
There are many variations of the Dambou recipe according to individual tastes. It can be enjoyed with meat, fish or if you are a vegetarian, you can very well make delicious Alloco.
Some use semolina for couscous, rice flour, millet or wheat couscous, or corn couscous, steamed for 20 to 30 minutes.
Once you have made your choice, just add spinach, moringa leaves, which have health benefits, onions, chilli, broth and peanut oil!
Steps
1 Done | Preparation of spinachIf you use frozen spinach, boil it in water for about ten minutes. |
2 Done | Couscous preparationIn a saucepan, boil water. Meanwhile, pour the semolina into a large dish and add 2 to 3 good tablespoons of olive oil. |
3 Done | Couscous cookingOnce the couscous has worked well, add the boiling water, mix a little bit then leave to stand until the semolina has absorbed the water. |
4 Done | Slice and cook your onions over medium heat and crush your stock cube. Pour the broth powder, crushed chilli and drained spinach over the onion and mix well. Remove from fire. |
5 Done | Mix rice and spinachYour Dambou is almost ready! You just have to mix your mixture of spinach, onion and pepper on your couscous. Mix well and salt. Taste before serving and feel free to adjust the seasoning. |
6 Done | Your homemade Dambou is readyYou can serve your homemade Dambou with good meat or grilled fish. |
