Gnamankoudji is a very popular African drink. It is simply fresh ginger juice. Gnamakoudji means “spicy water” in Bambara/dioula.

Ginger rhizomes are used for the Gnamankoudji recipe. Ginger rhizomes are the stems that lie underground.

Ginger juice, also called Gnamankoudji, nyamakuji or Ganamakoudji is consumed in many West African countries such as Benin, Senegal, Guinea, Ivory Coast and Mali. Gnamankoudji is also consumed in countries such as Morocco, especially during Ramadan.

Ginger has many health benefits, it is highly valued in Africa as well as Asia.

Preparation of ginger

Peel the ginger and cut it into large pieces. Pour your pieces of ginger into a blender, add a glass of warm water and mix everything in a blender with a little water until a paste is obtained. Book.

Ginger Infusion

Bring 1 liter of water to a boil. Put your ginger paste in a large salad bowl or a large pitcher then add the liter of boiling water. Cut your lime into quarters and add them to your Gnamankoudji. Leave to infuse for at least 30 minutes.

Filter the Gnamankoudji

Filter your Ginger Juice using a strainer to remove residue. Then add the mint leaves and sugar. I advise you to add the sugar little by little and to taste. The traditional Gnamankoudji recipe includes 500g of sugar, but that's not to everyone's taste!

Put in the fridge

You can also add a sachet of vanilla sugar before putting your Gnamankoudji in the fridge in a large bottle.
