What is Kefta ?

Among the delicacies Morocco has to offer, kefta meatballs hold pride of place. These small, spicy meatballs are a staple of Moroccan cuisine and are enjoyed not only in Morocco, but also in many countries around the world.

Origins of the Recipe

Kefta meatballs have their roots in Morocco’s rich culinary history. Although the concept of meatballs is universal, kefta meatballs are distinguished by their spices and aromatic herbs. The word “kefta” derives from the Persian “kufta,” meaning “minced.” This reflects the cultural and culinary influences that have crossed the Maghreb over the centuries.

In Morocco: kefta
In Turkey: köfte
In the Indian subcontinent: kofta

What to serve with your homemade kefta?

In Morocco and the Maghreb: Kefta meatballs are often served with crusty Moroccan bread, ideal for dipping in the sauce. They can also be cooked in a tagine with tomatoes and eggs.
In Middle Eastern countries, these meatballs are often served with rice or pita bread. In Turkey, they can be grilled and served with fresh vegetables.

Preparation of the Kefta stuffing

Place your ground meat in a small bowl. Peel and slice your onion and garlic cloves, and add them to the stuffing. Then add all the spices and the egg.

Add the herbs and mix

Chop your fresh herbs and add them to the meat. Mix your kefta stuffing well by hand, kneading it as if it were bread dough. Your stuffing is ready when the meat is well coated with the spices and herbs.

Shape your Kefta meatballs

Put a little oil in a shallow dish and dip your hands in the olive oil to prevent the meat from sticking when you shape your meatballs. Shape your meatballs and flatten them slightly.

Cooking your moroccan Kefta

Heat a little oil in a large frying pan and brown your kefta meatballs over high heat for 4 to 5 minutes on each side.
