2 big Potatoes Can be replaced by cassava
1 Sweet Potato
2 tablespoons Tomato paste
2 cubes Vegetable broth
1 Chili pepper Habanero, cayenne or West Indian pepper
3-4 leaves Laurel
As you like Salt & Pepper
10cl Vegetable oil or Peanut Oil
1kg Rice Basmati rice
1,5L Water

Mafé with beef from Senegal a popular recipe from West Africa also called peanut stew, maffé. It’s a delicious stew made with beef, (but which can also be made with chicken, lamb or fish) simmered in this delicious peanut sauce thanks to the peanut butter.

Mafé is a typical West African recipe that uses peanuts, which are very popular in this region. From Mali to Senegal, via Guinea. Each country offers the Mafé recipe in its own way, varying the meat (beef, chicken, lamb or fish) and vegetables (carrots, potatoes, sweet potatoes, eggplant, cassava, Diakhato, Okra).

A few Tips for a successful Senegalese Beef Mafé:

Do not put too much tomato puree, otherwise the sauce will taste sour. If the sauce is too acidic, add a little sugar to break up the acidity. Cut the meat you have chosen for this Mafé recipe into cubes that are not too thick for good cooking.

Do not hesitate to remove the pieces of peppers if they start to soften.

As soon as the sauce thickens and you see a little oil rising to the surface, your beef Mafé is ready!

Serve your Senegalese-style beef Mafé with basmati rice. You can also add a little cilantro if you like that.

Cut your vegetables

Slice your onions, chilli, dice your tomatoes, cut your potatoes and eggplant beforehand to save time.

Cut the meat into small pieces and brown your pieces of meat in oil in a pot.
Brown the meat.

Brown the meat and add your chopped onions.
Fry your onions with the meat until brown then add the diced tomatoes.

Add 2 tablespoons of tomato paste and cook over medium heat for 2 to 3 minutes then cover with water (about 1.5L of water).

Dilute the peanut paste

Dilute 3 tablespoons of peanut paste with a little vegetable (or chicken) broth, stir until there are no lumps.

Add the Senegalese Mafé vegetables

Add the cut vegetables, the two stock cubes and a few bay leaves.
Let everything simmer for about 45 to 50 minutes (until the sauce thickens)

Cooking Basmati Rice

15 minutes before the end of cooking your beef mafé, cook your Basmati rice (about 1kg for 6 people).
