Origin of Piri Piri Sauce

Piri Piri Sauce also called Peri Peri sauce is a spicy sauce originating from Angola or Mozambique. Peri Peri Sauce is very widely adopted in Portugal. The different variations of Piri Piri sauce have been around since the 15th century, when Portuguese settlers in Angola and Mozambique used red chili peppers and paired them with red wine vinegar, paprika, garlic and other products. imported from Europe. The sauce is also popular in countries like South Africa, Canada, and Australia.

Piri Piri Sauce Ingredients

The most common ingredients found in piri-piri sauce are lemon, bird’s tongue peppers, vinegar, garlic, paprika, and oil, but it’s not uncommon to also see some tarragon, citrus zest, oregano and other aromatic herbs. You can vary the intensity of the sauce from relatively mild to extremely hot. In Portugal, one of the most popular dishes using this sauce is called “frango assado com piri piri”, consisting of chicken covered in piri piri sauce.

Wash your Pili Pili Peppers

Wash your bird's tongue peppers and remove the tail with a knife. Be careful not to touch your face, it can burn! You can use gloves for added safety.

Cooking peppers

Put your washed and stemmed Pili Pili peppers in a saucepan and cover them with the juice of your 10 lemons. Then add the Paprika (optional), salt and your garlic cloves, taking care to remove the skin. Cook your peppers for about 8 hours over low heat. If you notice that they are starting to stick or burn, do not hesitate to add a little water.

Mix your cooked peppers

After 8 hours of cooking, the peppers should have absorbed all the liquid (lemon juice and possibly water). Then mix them until you obtain a homogeneous cream.

Your homemade Piri Piri Sauce is ready!

Store your Piri Piri sauce in a glass jar (a jar of jam for example) and put it in the fridge. You can also store your chilli sauce in the freezer.
