With the arrival of sunny days, salads are back! What could be better than Kenyan Kachumbari?! A delicious East African salad that is ultra-refreshing, simple, and quick to make at home.

Kachumbari is simply made with tomatoes, cucumbers, red onion, cilantro, and a lemon-based dressing.

Wash and dice the tomatoes, cucumber, green chili pepper, and red onion. Place everything in a salad bowl.

Wash your coriander leaves and chop them. Add the coriander, lemon juice, salt, and a little pepper to the salad bowl. Mix everything together well.
