Garba is a delicious Ivorian recipe for Attieke (you can use cassava semolina), served with fried tuna, onions, tomatoes, chives, and chili peppers. It’s a very easy and quick recipe to make that will delight the taste buds of your African cuisine-loving guests!

Preparing the tuna

Clean your whole tuna (or tuna steaks) and cut each fish in half widthwise. Sprinkle your fresh tuna pieces with salt and pepper and let them marinate for at least 2 hours.

Frying your fish

Place some flour in a shallow dish, then dip your fish in it so that it is well coated in flour so that it does not stick when frying. Heat some frying oil in a large frying pan or saucepan and dip your floured tuna pieces in it until they form a nice golden crust. Reserve a few tablespoons of frying oil in a bowl for serving.

Vegetable preparation

Finely chop your tomatoes, onions, and chives. Set aside for serving your Garba.

Preparation of the attieke

If using Attieke, crush your ball with your hands to break it up. Put the contents of your Attieke sachet in a bowl with 2 tablespoons of water and heat in the microwave for 2 minutes. Crumble your stock cube into it. Add a pinch of salt, pepper, and a few tablespoons of tuna frying oil to your Attieke.
